The difference between light and amber nectar is due to the filtration of salts and minerals in the production, which is controlled to produce a consistent product. Of equal sweetness, the light is neutral flavored while the amber has a mild, maple like flavor.
I tried the Hazelnut agave -- yummo! Great on vanilla frozen yogurt, drizzled with coconut oil, shredded coconut. Probably great with any desert. The hazelnut flavor is very good.
I like regular agave flavor as well. My initial taste of it was similar to ribbon candy I ate as a child. The taste is similar to honey and maple flavors combined. I wish the bottle size was larger though.
Agave has a low glycemic rating for those with blood sugar issues.
