Looking for a healthy alternative to conventional table sugar that's much lower in carbohydrates? Xylitol is an outstanding choice. This sugar alcohol is derived from corn, and has a much lower glycemic rating. As a result, it metabolizes slower in the body and helps support healthy blood/glucose levels already within the normal range. Extensive clinical studies continue to demonstrate that Xylitol is safe for both adults and children.
Diarrhea may occur with excessive consumption. If this happens, reduce intake or discontinue use.
Xylitol is a naturally occurring low-calorie sweetener found in fruits, vegetables and certain hardwoods. Our bodies can produce up to 15 grams of Xylitol from other foods we ingest daily. Though Xylitol is commercially manufactured from the cellulose of wood, cane pulp, seed hulls or cornhusk; NOW Xylitol is made from cornhusk.
Xylitol is technically not a sugar but rather a sugar alcohol (polyol). Unlike other well-known sugars like sucrose, fructose, sorbitol and dextrose that have 6 carbon atoms, Xylitol contains only 5 carbon atoms. Unlike sugar Xylitol is slowly absorbed, does not cause a rapid blood sugar increase and does not require an immediate insulin response from the body to be metabolized. Its unique characteristic accounts for the fact that this reduced calorie sweetener boasts 40% less caloric impact at 2.4 calories per gram versus 4 calories for sugar. Xylitol provides approximately the same sweetness as sugar with a slight cool sensation.
I have used it for baking in many different recipes and it is great. My whole family loves it. We have even used it to make homemade ice cream and it has such a great taste. I use similar amounts as I would for sugar and have had great success. The first few days I would suggest not eating too much until your body adjusts to it. It did cause some stomach cramping the first couple of days. Now we use it a lot and have no side affects at all. I would recommend it to anyone. It is a great sugar substitute!
I like NOW Xylitol Sweetener. Other reviewers did not find it sweet, but I found it very sweet. I have a very sweet tooth and like the way the sweetener tastes when I add it to my Diet Pepsi. Great product for me.

Soooo sweet and soooooo very, very much like sugar. Yes! It is expensive but for those special recipes or when you want to fool guests. . .this is just the thing. I never have sugar in my house but xylitol is in the sugar bowl and people never know the difference. It's crystalline like sugar, too. Splenda is a bit too fine grained.
