** Fermentation involves heat, and calls for more than 10 hours
between chopping the coconut and pressing the oil, adversely affecting flavor.
How coconut oil is processed is the key to optimizing its taste, texture,
color, and aroma. Within two hours of Nutiva's coconuts being chopped, the oil
is cold-pressed at below 104 degree's. Contrast this to 99 percent of the
coconut oil used today in cooking and body care: first the coconut is chopped
and left to dry in the sun for days, then the meat is scooped out and sent
thousands of miles to giant oil mills where the oxidizing coco meat is refined,
bleached, and or deodorized—and, ironicly this product is often labeled as
"certified organic".
There is no comparison between Nutiva's raw, extra-virgin Organic Coconut

industrialized coconut oil, with its bland taste, faint aroma, and off-white

Since the 1960s, coconut oil has been mistakenly described as unhealthy. The

Coconut oil is about 50 percent lauric acid, a rare medium-chain fatty acid

Wonderful product for light pan frying and cooking. I also use it mixed with unscented moisturizing lotion and aloe vera on my skin and hair. Unlike seed oils (safflower, sunflower, etc.) this oil does not become rancid or get "sticky" after sitting unrefigerated, even for several months. Evidence shows that coconut oil stimulates thyroid function and has wonderful antimicrobial/antiviral properties. The antiviral, antibacterial, and antifungal properties of the medium chain fatty acids found in coconut oil have been known to scientists since the 1960s. This is a quality product sold at a very reasonable price.
I have been using this for 3 months now and have experienced weight loss, clearer skin, and heightened energy among other great changes. I would recommend this as a food, cooking oil, and in replacement of skin care products.
I love the taste of Nutiva coconut oil in my coffee. I didn't think I would like it but it makes your coffee like a desert if you put sweetener in it. It keeps you feeling full and sometimes I'm not hungry for anything until lunch. I also use it in stir fry recipes.

I didn't really appreciate the quality of this product until I ran out and bought another brand at the grocery store. Yuck! This is soooo much better! Very creamy and smooth, mildly coconutty. When melted it retains the clean fresh taste (the other brand smelled and tasted burnt!). Wonderful texture in low carb baked goods, great for frying. I'll never buy the other brand again!
