October 08, 2018Reviewer: Janet in Massachusetts* We made these cookies and then used them to make low carb ice cream cookie sandwiches by adding Enlightened mint chocolate chip ice cream between them. Wrapped them up and put in freezer to firm up. So indulgent, with minimal carbs. They were pretty delicate prior to freezing, but absolutely delicious!

I baked two batches of them, one I underbaked and they were definitely like whoopie pies still a bit dry. The second batch I bake longer to see if they'd be more cookie like and there are very dry and crumbly.
April 11, 2018Reviewer: Margaret in Georgia* I'm not a big chocolate person so for me the chocolate here was almost overwhelming, but everyone else who tried this cookie loved how the chocolate flavor was bursting out all over with this cookie. If you love chocolate, and especially appreciate dark chocolate, then this is about as guilt-free yet indulgent-tasting a treat as you're going to find.
