June 06, 2020Reviewer: Jonni in Georgia* OMG!!!! I haven't had carrot cake for over a year. I chose to make muffins instead of the cake for portion control. The texture is very similar to traditional carrot cake when just cooled and just a bit drier when cold. I topped the muffins with a buttercream icing and fell in love! First bite, and HEAVEN! Now I can splurge and not harm my health. Sooooo easy to make; almost foolproof. I will definitely be getting more.

May 06, 2019Reviewer: Kathy in New York* Made these cupcakes for company and everyone loved them. Moist cupcakes with bits of carrot in the mix. Very flavorful. Topped them with a lower carb vanilla frosting made by Simple Mills that I bought on Netrition's site.

I added more erythritol, and sour cream to give the cake a better bouncy moist texture and it came out perfect.. ingredients are pretty good although not strict keto... will be purchasing again.
