October 29, 2020Reviewer: James in Maryland* This mix makes a really nice lemon flavored cake and the batter bakes up really well. I thought the cream cheese was an odd addition to a lemon cake, but the cream cheese flavor is not overwhelming and adds only a subtle taste of cream cheese while giving the cake very nice body.
The icing glaze mix is also quite tasty. I would have liked more of this mix so that more of the cake could be iced as the icing really sets up the flavor of the cake. Other than that I very much recommend this mix.
No odd aftertaste and quite moist. Very nice with a cup of tea. I enjoyed this cake.
I also recommend following the instructions and placing a piece of parchment paper at the bottom of the pan and spraying the pan well. Doing so will help your cake to come out of the pan in one piece and looking nice.
The recipe calls for a an 8"x3.5" loaf pan which I don't have and could not find one of that size. A similar size pan will do fine. I used a pan of approximate volume and had plenty of room in the pan. I expect a slightly smaller pan than recommended would work fine. I wouldn't recommend going much bigger than say 8"x4" or your cake will probably come out a little flat.
