December 05, 2018Reviewer: John in North Carolina* Got the idea to use this as a potential coffee creamer. When I got the package, I was surprised to see the message on the package that it makes a great coffee creamer - looks like I wasn't the only one with this theory. The good news is that it dissolves very well into coffee (at least as easily as powdered creamer). The other good news is that it doesn't impart an alcohol taste to the coffee like coconut extract does. The bad news is that it seems to impart a very slight sour and off taste to the coffee. Its not bad, but I think I prefer the taste of the regular creamer. To be fair, I will try it as intended and reconstitute & use it as coconut milk in cooking. I will update my review if things change.

The result is a great-tasting coconut milk. I cannot have regular coconut milk, which often contains dairy, as well as additives such as guar gum, gellan gum, gum arabic, and xantham gum, because dairy/gums give me indigestion. This coconut milk powder doesn't contain any gums, nor dairy, and is hard to find locally. I am so glad that I found it here.
