Low Carb Chocolate Walnut Protein Biscotti

- 3 TBL Vitafiber
- 1 TBL coconut oil
- 1 TBL unsweetened cocoa powder
- 1/3 cup vanilla whey protein powder (or protein powder of choice)
- 1/2 tsp vanilla
- 1-2 oz walnuts, chopped
- Low Carb Sweetener, to taste
Put Vitafiber and coconut oil in a small sauce pan and heat until bubbles form, about 1 minute. (If you prefer, you can microwave the ingredients until they bubble.) Add in all other ingredients. If it's too dry, add a little water.
Shape into bars and put in the refrigerator, for an hour or so, to harden. If you prefer a cookie, scoop mixture with tablespoon onto a cookie sheet.
Bake bars or cookies at 350 degrees for 5 minutes (for cookies) and 10 minutes (for biscotti).
