Whipped Coconut Cream

Chill a can of Heavy Coconut Cream in the refrigerator (preferably overnight) so that it hardens. When you take it out, do not shake it. During the chilling process, the cream and liquid will separate. Carefully open can from the bottom instead of top and pour out the liquid. The liquid will be on the bottom and the hardened cream will be on top. Save the liquid for smoothies.

Spoon the cream into a bowl and beat it on high speed for a couple minutes until peaks form.

Optional: Sweeten it with vanilla extract and your favorite sweetener, like Swerve Confectioners Style low carb powdered sugar which is a great sweetening ingredient to add to whipped cream.
